Conservor Shallots

English Shallot crop
We have 2 growers dedicated to us, based in eastern England, producing
traditional round shallots and echalions, also known as Banana Shallots, here in
the UK. This provides year round supply to supermarkets and caterers.
The
shallots are planted at the end of the February in the UK and are harvested
throughout July and August. After a period of 6-48 hours field drying, they are
taken to temperature controlled stores, where they are dried further for about 4
weeks, producing the brown outer skins.
Shallots have a unique mild
sweet flavour, making them popular with professional cooks, and are used in both
Western and Eastern cuisine
UK grown echalions, also known as ‘Banana Shallots’, are a versatile British vegetable and a cross between an onion and a shallot. Ease of preparation is driving demand from the catering sector across the country.
