Interveg primarily source ginger from China, which produces almost a quarter of the world’s ginger. We also have sourcing links with both Thailand and Brazil.
Ginger is popular in Indian & Chinese cuisine, its potent flavour used to spice up many dishes, particularly seafood and vegetarian dishes.

The ginger curing process starts underground, where product is covered in earth for a period of about 3 months. It is still wet when removed from the underground storage, but further cures while on route by sea which takes around 4 weeks.

The process is completed on arrival at our storage and distribution centre, with a further 3-4 days of warm air drying, taking place prior to despatch.
